The four things that give a set away
A matching set is two garments in the same fabric, which is also the definition of a pyjama. Everything that separates the two is in the detail, and once you know what to look for it is obvious in a shop window.
First, piping. A contrast cord sewn into the seams is a sleepwear convention with almost no daytime equivalent. If a set has piping, it reads as pyjamas no matter how good the fabric is.
Second, the collar. A soft camp collar with a notch, the kind that lies flat and open, is a sleep shirt shape. A crew, a proper shirt collar with a stand, or no collar at all all read as clothing.
Third, fabric weight and finish. Anything with a visible sheen at a light weight looks like a sleep satin. A dry matte finish, a heavier rib, terry, boucle or linen all read as daywear even in exactly the same silhouette.
Fourth, the styling around it. A set worn with slides and nothing else is sleepwear. The same set with a structured shoe, a real bag and one hard accessory is an outfit. This is the cheapest of the four fixes and the one most people skip.
The rule of thumb that holds: if you would not answer a front door in it, it is not a going-out set.

Break the match on purpose
The most reliable way to make a set look deliberate is to stop treating it as a set. Wear the trouser with a different top in a completely different weight, or the top with a trouser in a contrasting fabric. What you lose in coordination you gain in looking like you assembled an outfit rather than took one out of a bag.
When you do wear both pieces, put something structured on top. A blazer, a denim jacket, a stiff trench: anything with a shoulder and a defined edge cancels out the softness underneath. This is why the same wide-leg knit trouser looks like loungewear with a matching hoodie and looks like clothing with a tailored jacket.
The other lever is proportion. Sleepwear sets are cut generously on both halves, so an outfit that is loose on top and loose on the bottom reads as sleep by default. Fix it in one place: crop or fit the top, or narrow the trouser. One tight point and one loose point is the whole trick, and it works in every fabric.
Footwear does more than it should. A flat slide keeps a set in the bedroom. A loafer, a mule, a boot or a clean trainer moves it out, and takes almost no thought.

And when you are actually staying in
None of the above is an argument against pyjamas. It is an argument for knowing which one you have bought. A real sleep set is designed for a different job: it should be loose at every point the body presses into a mattress, breathable enough to get through a night without waking up damp, and soft enough that you do not notice a seam at three in the morning.
That means the priorities invert. Piping is now a nice detail rather than a tell. A camp collar is genuinely more comfortable to sleep in. And fabric matters more than silhouette, because you are lying in it for eight hours rather than being seen in it for two.
Weight is the choice to get right. A cotton poplin or a fine voile is what you want in a warm room; a brushed cotton, a pointelle or a rib is what you want in a cold one. Washable silk sits in between and regulates temperature better than either, at a price that only makes sense if you sleep in it most nights.
One genuinely useful test before buying: reach both arms straight up over your head. If the top rides up above your waist and stays there, it will do that in bed too, all night.
